Our blackened chicken salad is more than your everyday office packed lunch! It may look like a fiddly affair, but with very few ingredients this meal can be rustled up the evening before in no time at all. We use a few simple spices to spring our salad into life; cinnamon and ground ginger combine to give the chicken a flavoursome crust which works wonders with the sweet and savoury fluffy couscous. To top it off add a handful of lambs lettuce and rocket for a peppery finish.
One of the real perks of packing your own lunch is you know exactly what goes into it. Out goes the hidden salts, sugars and fats and in with the nutritious foods which make your body feel great! If you’re looking for a superfood salad that’s also super quick, our quinoa, broccoli and asparagus recipe is just the trick. Either buy ready to eat quinoa or cook a batch for the week; combine slices of avocado, fibrous broccoli florets and cherry tomatoes. To add a crunchy, sweet taste and texture we use mango, blueberries and pine nuts.

The classic Caesar salad is a legend in its own right. Full of crunch, crisp and sweet tangy flavours, it’s no surprise it’s been one of the most popular leafy dishes around the world! We give the classic recipe our own Florette twist by adding delicious baby kale, spring onions and seedy chunks of brown bread for croutons. Whilst the chicken breast is cooking, throw all the ingredients into a bowl and whip up the buttermilk dressing. Mix together before adding the chicken and you have a brilliant salad packed and ready to go for the next day!
If you’ve had a long hard day and are miles away to finding the motivation to cook for that evening – let alone make your food for the next day – our mixed bean salad is the go-to recipe when you’re after speedy lunch. Made with just a handful of ingredients, this salad can be put together in a few minutes and is a much cheaper alternative to buying your food out. Our recipe includes feelgood Florette salad leaves, spring onion and juicy sundried tomatoes to cut through the crumbly feta cheese.
Hopefully you won’t need this just yet, but this risotto is perfect to get you through the colder months. Thick, rich and delicious, our recipe uses crunchy asparagus, salty bacon and zesty lemon for a brilliantly balanced and moreish meal that will have you keep going back for just one more spoonful! Make a double batch the evening before and pack what you don’t scoff in a microwavable container to heat up at lunch the next day.
