Pumpkin, Walnut & Feta Cheese Salad »


Pumpkins aren’t great just for carving up once a year, and this fresh and vibrant salad is a delicious way to bring out the best of seasonal ingredients. Slice up your pumpkin into cubes and season with salt, pepper and a glug of vegetable oil before roasting until soft and golden. For the marinade, combine sweet runny honey and white wine vinegar before lightly reducing in a pan with a handful of crunchy walnuts. To serve, scatter the moist pumpkin cubes over a bed of crispy salad, apply the dressing and finish with a good sprinkling of crumbly feta cheese.
