- 1 Avocado
- 2 Hard Boiled Eggs
- Rustic Bread (cut into slices)
- 1 tsp Dijon Mustard
- 1 tbsp Greek Yogurt
- 2 tbsp Lemon Juice
- Pinch Sea Salt
- Black Pepper
- In a bowl mash the avocado and add in the mustard, yogurt, lemon juice, salt and pepper.
- Roughly chop the boiled eggs and fold them gently into the avocado mix.
- Toast your bread and then layer with leaves and then the avocado and egg salad.
