Beetroot, Feta and Edamame Salad

Ingredients

  • 1 bag of Florette Power of Plants Rocket & Kale Salad
  • 2 cups of grated beetroot
  • 2 cups of frozen edamame beans (place in a sieve and pour over hot water to defrost)
  • ½ pack of feta cheese
  • 1 fig sliced
  • ¼ cup pistachio’s roughly chopped

Dressing;

  • 2 tbsp cider vinegar
  • 1 tbsp olive oil
  • 1 tsp wholegrain mustard
  • 1 tsp honey
  • Pinch salt
  • Black pepper

Directions

  1. Divide the salad onto two plates or bowls. Top with the grated beetroot, edamame, feta, pistachio’s and fig slices.
  2. Add all the dressing ingredients to a jar and shake to combine.
  3. Pour the dressing over the salad. Enjoy.
