Simple Prawn Mango and Pomegranate Salad

Prep this swish salad bursting with flavours in a snappy 5 minutes


  • 1/2 bag Florette Classic Crispy
  • 1 pack of pre-cooked jumbo prawns
  • 3 tbsp pumpkin seeds
  • 3 tbsp pomegranate seeds
  • ½ mango chopped into cubes
  • Dressing;
  • Juice ½ lemon
  • 3 tbsp extra virgin olive oil
  • Pinch sea salt
  • Twist black pepper
  • 1 tsp runny honey


  1. To make the dressing – add the lemon juice, olive oil, salt, honey and pepper to a jam jar and place the lid on then shake to combine.
  2. Divide the leaves between two plates, then top with the prawns, seeds, pomegranate and mango
  3. Drizzle with the dressing
