Prep this swish salad bursting with flavours in a snappy 5 minutes
Ingredients
- 1/2 bag Florette Classic Crispy
- 1 pack of pre-cooked jumbo prawns
- 3 tbsp pumpkin seeds
- 3 tbsp pomegranate seeds
- ½ mango chopped into cubes
- Dressing;
- Juice ½ lemon
- 3 tbsp extra virgin olive oil
- Pinch sea salt
- Twist black pepper
- 1 tsp runny honey
Directions
- To make the dressing – add the lemon juice, olive oil, salt, honey and pepper to a jam jar and place the lid on then shake to combine.
- Divide the leaves between two plates, then top with the prawns, seeds, pomegranate and mango
- Drizzle with the dressing
