Green Beans, Avocado & Halloumi Salad Recipe


  • 1 Bag of Florette Duo with Lambs Lettuce & Rocket
  • 4 Spring Onions (Sliced)
  • 1 Pack of Halloumi Cheese
  • 100g Florette Green Beans
  • 1 Avocado (Sliced Lengthways)
  • 100g Cooked Broad Beans
  • Handful Toasted Seeds
  • Vinaigrette Dressing


  1. Blanch green beans in a large stock pot of well salted boiling water until they are bright green in colour and tender crisp (roughly 2 minutes). Drain and shock in a bowl of ice water to stop them from cooking further.
  2. Heat a non-stick frying pan or griddle pan and cut the Halloumi into 6-8 slices and cook them quickly on each side for 2 minutes until lightly tinged brown.
  3. Mix the salad leaves together with the vegetables and then top with the Halloumi, seeds and dressing. And serve!
