Delicious Mushroom & Red Pepper Salad


  • Florette Duo
  • 250g Punnet Mushrooms
  • 100g Jar of Roasted Red Peppers
  • Red Chilli
  • 30g Fresh Basil Leaves
  • 1 Garlic Clove (Crushed)
  • 1 Lemon
  • 2 tbsp Olive Oil
  • Pinenuts
  • 30g Parmesan Cheese


  1. Saute mushrooms in butter and oil for 5-7 minutes, or until tender.
  2. Combine the mushrooms with the Florette Duo, red peppers, chilli, basil, garlic and lemon rind in a large mixing bowl and toss well.
  3. Add lemon juice and oil to salad and toss again.
  4. Top off with sprinkling the parmesan shavings and pinenuts over the salad and serve!
